Classes 517-520 may be in plastic bags.
Class 507 must be made according to WI standard guidelines.

Class 506 - My Mother’s Spice Cake (the winner of this class from last year may not enter this class)
Ingredients:
- 5oz/150g butter or margarine
- 4oz/110g caster sugar
- 2 tsp golden syrup
- 2 beaten eggs
- 6oz/175g self raising flour (sifted)
- 1tsp baking powder
- ½ tsp ground nutmeg
- 1 tsp ground cinnamon
- ½ tsp mixed spice
- 2 tsp instant coffee (dissolved with a very small amount of hot water)
- Approximately 2fl oz./55ml milk
- ½ tsp vanilla essence
- Butter icing
- 2oz/50g unsalted butter
- 4oz/110g icing sugar (sifted)
- 1tsp instant coffee (dissolved in 1-2tsp hot water)
Method:
- Grease and base line two 8” sandwich tins. Heat oven to 170C (fan oven)
- Cream together butter and caster sugar. Add the golden syrup and gradually add the beaten eggs. Fold in the sifted flour, baking powder and spices. Add coffee and vanilla essence, then enough milk to make the mixture soft (dropping consistency).
- Divide the mixture between the two greased and base lined sandwich tins.
- Cook for approximately 20-25 minutes at 170C.
- Leave for 5 minutes before turning out onto a cooling rack. Leave to cool.
- Make butter icing using an electric or hand whisk.
- Sandwich together with the coffee butter icing and decorate the top with sifted icing sugar.
